These fruit have a deep orange colour and typically weigh less than 1kg. They are very good for kitchen use. Cut in half, roasted and stuffed with chilli con carne they make a perfect meal for one. An excellent flavour, beautiful and productive making this a wonderful French heirloom choice to grow.  Its alternative name is Rouge Vif D’Etampes meaning vivid red.  The eye-catching fruits are flattened, deeply ribbed, and concave on top. A revelation in flavour and for cooking: I found a recipe for cushaw coffee cake – mmm. And another for cushaw bread – yum. And that was after I tried these roasted, baked and mashed (more gorgeous yum). You ought to know that these are vigorous viners to 5m but they can be trained to a circle around the plant. They are more squash like than pumpkin, producing bottle shaped fruits with a bulbous end. The skin is creamy white marbled with green, the stripes are more heavily marbled. Simply fantastic. This is a beautiful French heirloom with a delicious flavour.  The fruit is deeply scalloped, the flesh is a rich orange whilst the skin has a burnished sheen with mahogany tones. The vines can reach to 3m and can be trained   Roasting or grilling will bring out the sweet flavour, you can also try these fresh by cutting very thin slices; they are a popular choice for puddings but also make superb soup or stews.

You can use them to make pies, cheesecake, pancakes and flans. Hollow them out, stuff and bake as you would an acorn squash. Cubed and roasted it makes an excellent side dish.
